L'origine di questi termini si troverebbe nel latino pinsere, ovvero 'pestare, pigiare'. Non meno intrigante è la teoria che vede l'influenza della parola longobarda bizzo o pizzo, traducibile con 'boccone' (affine ai termini inglesi bit e bite), introdotta in Italia a metà del VI secolo d.C. dalle invasioni longobarde. Lo spostamento consonantico da b a p potrebbe essere spiegato dalla mutazione consonantica dell'alto tedesco, e in questo contesto si nota come in tedesco la parola Imbiss significhi 'spuntino'. Colui che, con maestria e passione, dà vita a questa meraviglia è noto come pizzaiolo. È interessante notare come la parola "pizza" sia stata introdotta nell'inglese solo negli anni '30 del Novecento; prima di acquisire la sua fama attuale, era spesso chiamata "tomato pie" dagli anglofoni, un nome che ancora oggi sopravvive in alcune varianti regionali. Il ministro della cultura italiano ha commentato che potrebbe trattarsi di "un lontano antenato del piatto moderno". Fu solo intorno al 1830 che le pizzerie di Napoli iniziarono a dotarsi di "stanze" con tavoli, offrendo ai clienti la possibilità di sedersi e gustare le loro pizze sul posto, trasformando un cibo da strada in un'esperienza più strutturata.
